Christmas time has arrived! Like always a lot of sweets, cakes, cookies & co. are around during this time of year and it can be pretty hard to keep discipline.

Here is the solution: don’t try to resist the cookies! But: don’t go for the unhealthy stuff!

Instead bake your own healthy X-mas cookies!

The following recipe is super easy to make! I created 3 different flavours – there should be something yummy for everyone. The cookies contain only almond flour and no other flour, means they are gluten free! There is also no butter or sugar added.

But the biggest plus comes here: leave your energy-gels and energy-bars at home and take those healthy cookies with you on the bike. The cookies are the perfect fuel for a long ride! And there is absolutely no need to feel bad because you ate cookies!

I don’t think there is a better way to spend a long X-mas training on your bike! Try them and enjoy!

Recipe 1 (dates& cinnamon)

1.25 cups almond flour

1 egg

1/2 cup shredded coconut

1/4 cup honey

1/3 cup canola or vegetable oil

1 tsp baking powder

1/8 tsp salt

1/2 cup dried& pitted Dates (chopped)

1/2 cup dried Cranberries (chopped)

1/2 cup Pecan (chopped)

1 tsp cinnamon

Recipe 2 (apples& vanilla)

1.25 cups almond flour

1 egg

1/2 cup shredded coconut

1/4 cup honey

1/3 cup canola or vegetable oil

1 tsp baking powder

1/8 tsp salt

1/3 cup dried Apples (chopped)

1/2 cup dried Raisins (chopped)

1/2 cup Walnuts (chopped)

1.5 tsp vanilla extract

Recipe 3 (dark chocolate)

1.25 cups almond flour

1 egg

1/2 cup shredded coconut

1/4 cup honey

1/3 cup canola or vegetable oil

1 tsp baking powder

1/8 tsp salt

1/2 cup dark chocolate (chopped)

1/2 cup dried cranberries (chopped)

1/2 cup almonds (chopped)

Each recipe makes 18 cookies 

Directions:

-Preheat oven to 350 degrees F.

-Cut nuts, dried fruits or/and chocolate into small pieces. Combine all ingredients in a large bowl. Mix well until batter is blended evenly.

-Make hands wet with water, this makes it very easy to portion the batter into balls. Place them onto a baking sheet and make sure to press them down a bit.

-Bake cookies for approximately 15 minutes.

-Remove cookies from baking sheet and allow to cool on wire rack before serving.

-Cookies can be stored in a container for about 1-2 weeks.
